My first try at stuffed chicken


Grilled Spinach and Ricotta Stuffed Chicken

In a bowl I mixed chopped spinach, bacon, onions, garlic, cheddar cheese, salt, and pepper.  I cut a pocket in each piece of chicken, spooned in the filling, and pinned the pocket together with a toothpick.  Each side of the chicken was seared on high heat to keep it juicy.  Then I adjusted the temperature to 350 degrees.  each side of the chicken was cooked for around 10 mins.
